Description
This experience takes place in Mehmet's home in Kagithane — a real Istanbul neighborhood, not a tourist spot, which is exactly the point.
You'll start with tea or coffee and easy conversation, then get into it: Mehmet walks you through the ingredients: crispy kadayif pastry, local unsalted cheese, clarified butter, and homemade syrup. You'll build it layer by layer, press it into the pan, and cook it together on a flame-top burner, flipping it at just the right moment to get the signature golden crust.
As it cooks, Mehmet talks about where künefe comes from, the regional differences, and how every family makes it slightly differently. Then comes the best part: you pour the hot syrup, watch it sizzle, and eat it straight from the pan, gathered around the table.
Künefe isn't an everyday dessert. It's made when guests arrive, when something is worth celebrating. Here you won't just taste it: you'll learn how to make it the way it's done at home.
